Dry beans are easy to grow and store for winter consumption. Also, freshly grown (new crop) dry beans are quicker cooking and more delicious than typically old beans from the store. The varieties here provide different eating qualities and all are specifically for dry use. The pods mature nearly all at once and thresh out easily by hand.
Harvest plants when most of the leaves have fallen and the pods are drying. Dry in a sheltered location. When thoroughly dry, thresh out beans by flailing or beating plants secured inside a large bag or beating whole plants inside a large clean container.
