The roots of this widely-adapted, hardy perennial are ground to make wonderfully hot and sweet horseradish sauces and condiments. We supply healthy root cuttings for spring planting.
Horseradish can be harvested in late fall or early spring. In the fall, a hard frost will sweeten the flavor of horseradish. Or, dig roots before the plant leafs out in the spring to maintain pungency. Roots should be divided and replanted every two years to prevent them from becoming woody.
