Scorzonera & Salsify
The most distinctly flavored root vegetables we know. Each is delicious and can't be compared with anything else for fall and winter mixed vegetable soups and stews, or cooking alone. Culture is the same as parsnips-sow in late spring, harvest in fall. Store in root cellar or refrigerator. ORNAMENTAL NOTE: Both are unique biennial ornamentals. Salsify makes purple flowers and scorzonera makes yellow ones the second summer.
