Sweet corn varieties are categorized by the naturally-occurring genetics they express, customarily abbreviated with lowercase letters in parentheses. Normal sugary types (su) offer old-fashioned corn flavor and sugars that rapidly convert to starch postharvest. Sugary-enhanced types, (se) and (se+), offer increased tenderness and sweetness, with a slower postharvest conversion of sugars to starch. Synergistic corns (syn) have a blend of tenderness and crispness.
