Artichoke/Cardoon

Globe artichokes are an easily grown gourmet delight. The "globe" is the flower bud, which includes the edible parts: the fleshy bases of the outer bracts, the inner bracts, and the "heart". Before transplanting to the field, plants must be exposed (vernalized) to a temperature of about 50°F (10°C) for 8-10 days.

Cardoons are related to globe artichokes however different portions of the plant are used. Plants must be blanched by tying, then wrapping with a material that will exclude sunlight. Blanching is best performed for 3-4 weeks in the cooler weather of late summer or early fall. This helps reduce bitterness of the leaf stalks and midribs. Cardoons are also grown for their large purple flowers and attractive silvery leaves.
