A unique market offering, Jerusalem Artichokes are also known as Sunchokes.

A high-yielding, carefree crop for additional winter sales. This extra-early strain produces large, white, potato-like tubers often weighing over 1/2 lb. each. They store well and can be eaten raw or cooked. The tall, 6-8', plants with bright yellow blooms make an attractive windbreak, helping to prevent soil erosion. Flowers in July and matures over a month before common varieties. Winter hardy in severe cold. Perennial in Zones 3-8. Organically grown at Johnny's. Organically grown.

Growing Information

Jerusalem Artichoke

CULTURE: As soon as possible after seed pieces are received, break or cut tubers into one- or two-eye pieces of approximately 1-2 oz. each (about 1 1/2" diameter). Plant pieces 4" deep and 12-18" apart in rows 18-36" apart. Do not allow seed pieces to dry out before planting. If you cannot plant them right away, store the tubers in a cool place 34°F (1.1°C). Plants grow best in light or sandy soil, but will also grow in clay soil if organic matter is added. Choose a permanent location as Jerusalem Artichokes are difficult to eliminate once established.
HARVEST: Tubers may be harvested from late summer through late fall. It is best to harvest tubers after several frosts as this improves their flavor.
STORAGE: For later consumption: Tubers may be frozen, refrigerated in perforated plastic bags, or stored in a root cellar in perforated plastic bags or slightly vented containers. Keep tubers damp to prevent shriveling. The next crop can be planted from harvested tubers or leave some in the ground to grow again. For seed stock: Keep tubers in a bucket of damp soil in a basement or other cool, damp space. Do not freeze.
SEED SPECS: One lb. of seed pieces (avg. 12 pieces) will plant 12-18'.
