Micro Greens
Gourmet salad greens harvested just as seedlings get their first true leaves. Micro greens are used like sprouts as a salad addition, garnish, or sandwich topping. Create your own mixes with a variety of leaf shapes, flavors, and colors.
CULTURE: Grow in a greenhouse or protected area. Because many different species can be grown for micro greens, we suggest that you follow the germination instructions for the specific variety being grown. However, success can generally be had by following these instructions for Brassica family members: Grow in shallow trays or 20-row flats. Broadcast seed thickly on the surface of the flat, seeds 1/4"- 1/2" apart, and cover lightly with sowing mix. Ideally, soil temperature should be 75F (24C) until germination, then reduced to 60F (16C). Maintain air temperature around 60F (16C). Water with a mister to prevent splashing sowing mix on the seedlings. Maintain even moisture and do not allow sowing medium to dry out. If fertilizing, incorporate fertilizer into the sowing mix before sowing, or use a bottom watering system for liquid applications to avoid residue on the leaves.
HARVEST: When seedlings get their first true leaves, anywhere from 1/2" to 2" in height. For most items this will be 2-4 weeks after sowing, depending on the variety, growing conditions, and final product size desired. Cut with scissors or a sharp knife and minimize handling to reduce damage. Micro mix must be washed before serving. Shelf life ranges from 5 to 10 days under proper storage conditions.
