Many vegetables can be held for a long time after harvest, anywhere from one month to six months. If you have appropriate storage facilities, you can grow in sufficient quantities that you'll be able to sell them all winter. One of the biggest trends in market gardening in recent years is the winter CSA, in which members pay for a monthly delivery of storage vegetables.
