Graffiti's brilliant purple heads are a great draw at farm stands and excellent for CSA's and restaurants. The colorful florets are attractive served raw with dip or as a cooked vegetable. Unlike Violet Queen, Graffiti produces a true cauliflower head on large plants. Best for fall harvest, but can also be sown in spring. Packet: 100 seeds.

Cauliflower

CULTURE: See cabbage. Cauliflower prefers a well-drained, fertile soil high in organic matter, a pH of 6.0-7.5 with a consistent supply of moisture throughout the growing season. Irrigate regularly for best results. Cauliflower does not do well in hot weather; the best success is with spring and fall crops.
PLANTING: Sow in 1-1 1/2" cell-type trays or peat pots from early March through June. If possible, keep soil at least 70°F (21°C) until germination, and 60°F (16°C) thereafter. Transplant outdoors when seedlings are no older than 4-5 weeks old. Older plants tend to be stressed and do not perform as well as actively growing seedlings. For early spring planting, harden plants carefully by gradually increasing cold before transplanting out, 18" between plants and 24-36" between rows.

BLANCHING: When small white heads become visible through leaves, gather the outer leaves over the head and tie with string or a large rubber band to preserve white curd color. Although tying is not necessary to grow cauliflower, the practice helps prevent yellowing of the curd due to exposure to sunlight and results in better head quality when curd develops during hot weather.
HARVEST: Keep an eye on development, cutting heads when desired size is obtained but before the curd becomes loose.
STORAGE: Store at 32°F (0°C) and 95-98% relative humidity for 2-3 weeks.
