Cipollini, which means "little onions" in Italian, develop small (no larger than 3" in diameter), flattened bulbs that can be used as fresh bunching onions or cured. Cipollini have more residual sugar than your average onion, which makes them delicious when roasted whole or caramelized in butter or oil. Choose from yellow, white, and red cipollini onion varieties.
