An early, productive, and great-tasting duo. Bred to create an eye-catching display at market, we created this pair with striking color contrast and matching silhouettes. Carmen and Escamillo represent a burgeoning pepper class for market growers: the Corno di Toro or “bull’s horn” pepper type. Our breeding work on carmine-red ‘Carmen’ was inspired by the fiery gypsy in the French opera of the same name. Carmen soon took the market by storm for its earliness, dependability, and great flavor. We quickly set to work breeding a companion, golden ‘Escamillo,’ which matches Carmen in flavor and beauty. Versatile and tasty any way you eat them — raw, cooked, sliced, diced, sautéed, stuffed, and especially fire-roasted, which caramelizes the sugars and elevates them to a whole new level of delicious! Both AAS award-winning peppers were bred by retired Johnny’s breeder and AAS Breeder’s Cup award winner Janika Eckert.
