There are two general classes of Arugula. Salad types typically have broad leaves, vigorous growth rates, and white flowers with pink streaked petals. These types are usually found in US markets. They have the typical peppery arugula flavor. Wild types typically have lobed leaves, slower growth rates, and yellow flowers. They are spicier than the salad types and are the type usually found in European markets. Flowers of both types have a mild arugula flavor.
